You can just drop the soul gem from your inventory onto the floor if it is filled with a lower level soul. this will release the soul in it. Do not carry pre filled gems otherwise you may be there awhile until you remember. The cost of the gem will indicate which is which however but it's best just to not carry the pre filled ones.

The higher ranking your common and greater but the Draugr Deathlord will make it into your Grand soul gem. Leave the giants and mammoths alone.
