Same. I’ve beaten junimo kart several times now, but always by taking the lava path. I’ve never even gotten half way through let alone beaten the mushroom path. It’s at the point where I all but give up if the kart goes that way.

It's impossible. Both arcade games are very difficult to complete, it just takes practice to get better at them. I'm pretty sure it pauses time when you are playing, (as long as you are not playing co-op) so take as much time as you need to complete it. Don't try to get all the coins if it is too risky.
To be fair, if you're trying to beat Junimo Kart you will probably spend more time playing Junimo Kart than you will ever spend in the Skull Cavern ... Everything about Stardew is relaxing and rewarding. Except for Junimo Kart. It’s comparable to the flappy goat achievement. It’s just not fun, at all. The rework is no better. It seriously needs to be less punishing on the tight jumps. This is one achievement that will be avoided.

I agree with you that the stage with the whale is the most difficult, it is the only one that in addition to the randomness of the track also throws bubbles which further raises the level of difficulty.
I can beat Junimo Kart occasionally, and I can beat JotPK consistently and usually only take 1-2 deaths max on worlds 1 and 2. Practice is the biggest thing - this took me many months of practice, but I only did a little at a time. On the 4th level look ahead and jump at the very last moment to beat the big gaps. On the 5th level, jump a lot and avoid the slime on the tracks.
